  • Wash the ripe plums under cold running water. Cut each plum in half to remove the pits, then chop them into small pieces.

Cooking

  • Combine the chopped plums, sugar, lemon juice, optional vanilla extract, and salt in a large pot.
  • Heat over medium heat until it begins to boil, stirring occasionally to dissolve the sugar.
  • Once boiling, reduce the heat to a simmer and cook gently for about 30-40 minutes.
  • Stir frequently to prevent sticking and ensure an even texture.

Finishing

  • Conduct a consistency test by spooning a small amount of jam onto a cold plate; if it wrinkles and holds its shape, it's ready.
  • Remove from heat and let it cool for 10-15 minutes before pouring into jars.
  • Sterilize jars by boiling them for about 10 minutes or running them through the dishwasher.
  • Carefully fill sterilized jars with warm jam, leaving about 1/4 inch of headspace.
  • Seal tightly and let the jars cool completely at room temperature.
  • Store in the refrigerator for several weeks or in a cool, dark pantry for about a year.
