Instructions

  • Add milk and peppermint extract. Mix until a smooth, pliable dough forms.
  • Roll dough into small balls, flatten them into discs about ½ inch thick, and place them on the lined baking sheet.
  • Freeze the discs for 30 minutes to firm up before coating.
  • In a microwave-safe bowl, melt dark chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  • Dip each frozen peppermint disc into the melted chocolate, coating completely. Let excess chocolate drip off.
  • Return coated patties to the parchment-lined tray and refrigerate until chocolate sets, about 30 minutes.
