For the Bruschetta Base

  • 1 loaf French baguette (sliced into 1-inch pieces)
  • 2 cups cherry tomatoes (diced)
  • 0.5 cup red onion (finely chopped)
  • 0.25 cup fresh basil (chopped)
  • 4 slices cooked bacon (crumbled)
  • 2 tablespoons olive oil (plus extra for brushing bread)
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)
  • Balsamic glaze (for drizzling, optional)

Instructions
 

Preparation

  • Start by washing and chopping all your ingredients. This includes dicing the cherry tomatoes, finely chopping the red onion, mincing the garlic, crumbling the crispy bacon, and chopping the fresh basil. Set everything aside in a large mixing bowl.

Cooking

  • Preheat your oven to 400°F (200°C). Arrange the sliced baguette pieces on a baking sheet. Brush each piece lightly with olive oil. Toast the bread for about 5–7 minutes or until golden brown and crisp.
  • In the bowl with your prepped ingredients, combine the diced tomatoes, chopped red onion, minced garlic, crumbled bacon, chopped basil, 2 tablespoons of olive oil, and season with salt and pepper to taste. Gently mix everything.

Assembly

  • Once the baguette slices are toasted, place a generous amount of the topping mixture on each toasted slice. Distribute the mixture evenly.
  • Drizzle balsamic glaze over each piece of bruschetta if desired.

Serving

  • Arrange the bruschetta on a platter, garnish with more basil or extra balsamic glaze, serve warm, and enjoy!

Notes

For a gluten-free option, substitute the baguette with gluten-free bread. For a vegetarian version, omit the bacon and consider adding crispy tempeh. Store leftovers in an airtight container. The toppings can last for 2-3 days while the toasted bread is best eaten fresh.
