  • 1 cup rolled oats use gluten-free oats if needed
  • 1/2 cup protein powder any flavor you like
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup natural sweetener
  • 1/2 cup dark chocolate chips or chopped nuts optional mix-in
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine rolled oats, protein powder, and salt. Mix well.
  • In a separate bowl, stir together almond butter, honey or maple syrup, and vanilla extract until smooth.
  • Combine wet and dry ingredients, stirring until a thick dough forms.
  • Fold in dark chocolate chips or nuts for added flavor and texture.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them evenly.
  • Bake for 10–12 minutes, or until edges are lightly golden. Do not overbake.
  • Cool on a wire rack for 10 minutes before serving. Enjoy warm or store for later.

Notes

For a vegan version, use maple syrup and plant-based protein powder. For a nut-free option, replace almond butter with sunflower seed butter. These cookies store well in an airtight container for 5–7 days or can be frozen for up to 3 months.
