Preparation

  • Gather all your ingredients. Chop the onion finely, mince the garlic, and prepare the chicken.

Cooking the Soup

  • In a large pot, combine the chicken, chicken broth, chopped onion, minced garlic, and cumin. Bring to a boil, then simmer for about 20 minutes until chicken is fully cooked.
  • Carefully remove the chicken from the pot, allow it to cool slightly, then shred it into bite-sized pieces.
  • Return the shredded chicken to the pot, and add the hominy and green salsa. Stir gently to combine.
  • Simmer everything together for another 10 minutes to allow the flavors to meld.
  • Taste the soup and add salt as needed before serving.

Serving

  • Ladle the soup into bowls, garnishing with fresh cilantro and a squeeze of lime juice. Serve hot.

Notes

Store leftovers in airtight containers. Reheat on the stovetop, adding broth for consistency if needed. Consider garnishing with sliced avocados or diced radishes for extra flavor and texture.
