Ingrédients
  

For the Chicken

  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Bowls

  • 1 cup cooked rice or quinoa
  • 1 cucumber diced
  • 1 tomato diced
  • 1 red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup tzatziki sauce

Instructions
 

Preparation

  • Rinse and dice cucumber and tomatoes. Slice red onion thinly. Cook rice or quinoa according to package instructions.

Marinate the Chicken

  • In a mixing bowl, combine olive oil, lemon juice, oregano, salt, and pepper. Add chicken breasts, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat. Place marinated chicken on the grill and cook for about 6-7 minutes on each side or until internal temperature reaches 165°F.
  • Remove chicken from grill and let it rest for a few minutes before slicing.

Assembling the Bowls

  • In serving bowls, layer cooked rice or quinoa, sliced chicken, diced cucumber, diced tomato, and sliced red onion.
  • Sprinkle crumbled feta cheese on top and drizzle with tzatziki sauce before serving.

Notes

For vegetarian options, substitute chicken with chickpeas. For gluten-free options, use cauliflower rice instead of grains.
