  • 1 cup milk Use coconut or almond milk for dairy-free.
  • ¾ cup sugar You can use honey or agave syrup as a substitute.
  • 3 pieces egg yolks For a vegan substitute, use an egg replacer or silken tofu.
  • 2 tablespoons lemon juice Freshly squeezed is best.
  • 1 teaspoon vanilla extract

Preparation

  • Gather all your ingredients to ensure a smooth cooking process.
  • Wash and dry the grapes, and have your cream and milk ready.

Cooking the Base

  • In a saucepan over medium heat, combine the cream, milk, and sugar. Whisk until warm and sugar is dissolved without boiling (about 5 minutes).
  • In a separate bowl, whisk the egg yolks. Slowly ladle some warm cream mixture into the egg yolks while whisking continuously to temper them.
  • Pour the egg yolk mixture back into the saucepan, cooking on low heat while stirring constantly until thickened (about 5-7 minutes).

Preparing the Grapes

  • In another saucepan, cook the grapes over medium heat until softened (about 10 minutes).
  • Blend the cooked grapes until smooth, optionally straining for a silky texture.

Combining Mixtures

  • In a large bowl, mix the grape puree with the cooled cream mixture, adding lemon juice and vanilla extract. Stir until well combined.
  • Pour the mixture into your ice cream maker and churn according to manufacturer’s instructions (approximately 20-25 minutes).
  • Transfer to a container and press parchment paper on top to prevent ice crystals. Freeze for at least 4 hours.

Notes

Store in an airtight container for 2-3 weeks. Allow to sit at room temperature for 10-15 minutes before serving for easier scooping. Avoid microwaving to preserve texture.
