  • 8 oz pasta of choice such as spaghetti, fettuccine, or penne
  • 1/4 cup dairy-free vegan butter
  • 1/2 cup roasted garlic soft and sweet
  • 2 tbsp tomato paste
  • 1/4 cup fresh basil chopped
  • salt and pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  • In a skillet, melt vegan butter over medium heat until it becomes frothy and aromatic.
  • Add roasted garlic and sauté for 1–2 minutes until fragrant.
  • Stir in tomato paste and cook for 2–3 minutes to deepen the flavor.
  • Add cooked pasta to the skillet and toss to coat. Add reserved pasta water as needed to create a silky sauce.
  • Season with salt, pepper, and fresh basil. Toss again and serve immediately, garnished with extra basil if desired.

Notes

For a twist, add red pepper flakes for spice or lemon zest for brightness. You can also mix in grilled tofu, shrimp, or chickpeas for added protein.
