  • 1 cup grated Gruyère cheese Substitute with Swiss or a blend of melting cheeses if necessary.
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Start by gathering and preparing all your ingredients. Thinly slice the onions and mince the garlic.

Cooking the Base

  • In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook them until caramelized, about 15-20 minutes, stirring occasionally.
  • Once caramelized, add the minced garlic and cook for an additional 1-2 minutes.

Simmering the Soup

  • Pour in the beef broth, add fresh thyme and bay leaf, cover, and let it simmer for 10 minutes.
  • Remove and discard the bay leaf.

Final Assembly

  • Add the cooked pasta to the pot, stirring gently to combine.
  • Season the soup with salt and pepper to taste.
  • Ladle the soup into bowls and top with grated Gruyère cheese and freshly chopped parsley.

Notes
