Dry Ingredients

  • 225 grams self-raising flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 150 grams dark brown sugar
  • 150 grams unsalted butter, softened
  • 2 large eggs
  • 150 ml strong brewed black tea, cooled
  • 100 grams crystallized ginger, chopped
  • tablespoons milk (optional, for glaze)

Preparation

  • Gather all your ingredients on the countertop and ensure the butter is softened.

Mixing

  • Cream together the softened butter and dark brown sugar in a mixing bowl until light and fluffy.
  • Add the eggs one at a time, ensuring each is fully incorporated before adding the next.
  • Sift the dry ingredients into the bowl and fold gently until just combined.
  • Gradually mix in the cooled brewed black tea until you have a smooth batter.
  • Fold in the chopped crystallized ginger.

Baking

  • Pour the batter into the prepared loaf tin and smooth the top.
  • Bake for 50-60 minutes, checking for doneness with a skewer.
  • Allow to cool in the tin for 10 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 4 days or refrigerate for 1 week. Can be frozen for up to 3 months.
