  • 1 lb chicken breast, cut into strips
  • 1 piece bell pepper, sliced (any color)
  • 1 piece red onion, sliced
  • 1 piece zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 4-6 pieces Pita bread
  • to taste Tzatziki sauce (optional)
  • to taste Lettuce (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and slice the bell pepper, red onion, and zucchini.
  • Cut the chicken into uniform strips.

Cooking

  • In a large bowl, combine the chicken strips with the sliced vegetables.
  • Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
  • Toss everything well to ensure even coating.
  • Spread the mixture evenly on a baking sheet, leaving space between pieces.
  • Bake for 20-25 minutes until the chicken is cooked through and the veggies are tender, reaching an internal chicken temperature of 165°F (75°C).
  • In the last 5 minutes of baking, place pita bread on a separate baking sheet in the oven to warm.

Assembly

  • Remove the baking sheet from the oven.
  • Assemble the pitas by placing a generous amount of the chicken and vegetable mixture into each warm pita.
  • Add tzatziki sauce and lettuce if desired.

Serving

  • Serve immediately while warm and enjoy!

Notes

For gluten-free alternatives, use gluten-free wraps or lettuce wraps. For a vegan version, substitute the chicken with tofu or chickpeas.
