Irresistible Easy Boursin Chicken

- 4 pieces chicken breasts Thawed if previously frozen
- 8 oz Boursin cheese Creamy garlic and herb cheese
- 3 cloves garlic, minced Fresh garlic for the best flavor
- 8 oz mushrooms, sliced Any variety can be used
- 1 cup heavy cream Can use lactose-free cream as a substitute
- 2 tbsp olive oil For cooking the chicken
- to taste Salt For seasoning
- to taste Pepper For seasoning
Instructions
Preparation
- Gather and prep all your ingredients. Ensure chicken breasts are thawed, wash and slice mushrooms, and mince garlic.
Cooking
- In a skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then place them in the skillet.
- Cook each side for about 6–7 minutes until golden brown and the internal temperature reaches 165°F.
- Once cooked, remove chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, add sliced mushrooms and cook for around 5 minutes until browned.
- Add minced garlic to the skillet and sauté for an additional minute until fragrant.
- Pour in heavy cream and stir to combine. Add Boursin cheese and stir until the sauce is smooth and cheese is melted.
- Return chicken to the skillet and coat with the creamy sauce. Simmer for a couple of minutes.
- Taste and adjust seasoning, adding more salt or pepper as preferred.
- Serve hot, spooning the sauce over each chicken piece.
Notes
For variations, consider adding vegetables like spinach or zucchini, or making it spicy with red pepper flakes. Store leftovers in an airtight container for 3–4 days.
