Ingrédients
  

Chicken and Seasoning

  • 1 1/4 lbs chicken breast (diced small)
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder (divided) 1 teaspoon for seasoning chicken; remaining for sauce
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt (divided) 1/2 teaspoon for seasoning chicken; remaining for sauce

Pasta and Base Ingredients

  • 12 oz gluten-free farfalle
  • 4 tbsp dairy-free butter
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 2 cups chicken broth
  • 1 2/3 tbsp gluten-free 1:1 flour
  • 2 cups dairy-free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy-free parmesan (shredded)
  • 2 tbsp pasta water (as needed) to adjust sauce consistency

Preparation

  • Gather all your ingredients. Dice the chicken breast into small pieces and measure out the various seasonings.

Cooking Pasta

  • Boil a pot of water. Add the gluten-free farfalle and cook according to package directions until al dente, about 10–12 minutes. Drain the pasta, saving some pasta water.

Seasoning Chicken

  • In a mixing bowl, combine diced chicken with smoked paprika, oregano, 1 teaspoon of garlic powder, thyme, black pepper, and 1/2 teaspoon of salt. Mix thoroughly.

Cooking Chicken

  • In a large skillet, heat some olive oil over medium-high heat. Add the seasoned chicken and cook for 3 to 4 minutes on each side until cooked through. Remove chicken from skillet and set aside.

Making Sauce Base

  • In the same skillet, melt dairy-free butter over medium heat. Add minced onion, Italian seasoning, remaining salt, and garlic powder. Simmer for a few minutes.

Thickening Sauce

  • Sprinkle gluten-free flour into the skillet, stirring to form a paste. Cook for about a minute, scraping bits from the bottom to incorporate flavors.

Adding Liquids

  • Gradually whisk in chicken broth, followed by dairy-free heavy cream. Stir until smooth, then add chopped spinach and simmer for 3 to 4 minutes.

Incorporating Parmesan

  • Stir in dairy-free parmesan cheese until it melts smoothly. Add reserved pasta water if the sauce is too thick.

Combining with Pasta

  • Introduce cooked farfalle to the sauce, tossing gently to coat completely. Add more reserved pasta water if necessary.

Serving

  • Return seared chicken to the skillet and mix everything together. Plate the Irresistible Dairy Free Chicken Alfredo.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat gently, adding a splash of dairy-free milk or reserved pasta water as needed.
