Preparation

  • Gather all your ingredients. Dice the Yukon Gold potatoes and slice the carrots. Finely chop the onion and mince the garlic. Rinse and chop the fresh dill.

Cooking

  • In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  • Add the diced potatoes and sliced carrots, stirring for about 5 minutes.
  • Pour in the 4 cups of chicken or vegetable broth and bring to a gentle simmer.
  • Carefully add the salmon chunks and cook for 8-10 minutes until the salmon is opaque and flakes easily.
  • Stir in the heavy cream and chopped dill, cooking on low for another 3-5 minutes.
  • Season with salt and pepper to taste.
