Preparation

  • Gather all ingredients and let cream cheese come to room temperature.

Crust

  • Combine graham cracker crumbs with melted butter and press into the bottom of a lined baking pan.
  • Bake for about 10 minutes at 350°F (175°C) until slightly set and golden.

Cheesecake Filling

  • Beat softened cream cheese until smooth, then mix in powdered sugar, cocoa powder, and vanilla extract until creamy.
  • Whip the heavy cream until stiff peaks form.
  • Fold whipped cream into the cream cheese mixture carefully.
  • Pour the cream cheese filling over the cooled graham cracker crust and spread evenly.
  • Drizzle warm chocolate ganache over the filling and create a swirl with a knife.
  • Sprinkle mini marshmallows evenly on top.

Chilling

  • Cover the baking pan and refrigerate for at least 4 hours or overnight.

Serving

  • Once set, remove the bars using the parchment lining, cut into squares, and serve chilled.
