Ingrédients
  

Cookie Dough

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1/4 cup brewed coffee cooled

Coffee Glaze

  • 1 cup powdered sugar
  • 1-2 tbsp brewed coffee for glaze consistency

Instructions
 

  • Step 1 – Preheat the oven: Preheat to 350°F (175°C). Line baking sheets with parchment paper.
  • Step 2 – Combine dry ingredients: In a bowl, whisk together flour, baking soda, and salt. Set aside.
  • Step 3 – Cream butter and sugar: In another bowl, beat butter and granulated sugar until light and fluffy.
  • Step 4 – Add wet ingredients: Mix in the egg, vanilla extract, and brewed coffee until smooth.
  • Step 5 – Combine: Gradually add the dry mixture to the wet ingredients and stir until just combined.
  • Step 6 – Shape dough: Scoop tablespoon-sized portions onto baking sheets, spacing them 2 inches apart.
  • Step 7 – Bake: Bake for 10–12 minutes or until edges are lightly golden. Cool on the tray for 2 minutes, then transfer to a wire rack.
  • Step 8 – Make glaze: Mix powdered sugar with brewed coffee until smooth and pourable.
  • Step 9 – Glaze cookies: Once cooled, drizzle glaze over cookies and allow to set before serving.

Notes

Store cookies in an airtight container for up to one week at room temperature or freeze for up to three months. For a fun twist, add chocolate chips or sprinkle a little sea salt before baking for a salty-sweet balance. Perfect with a cup of espresso or cappuccino!
