Instructions
 

Preparation

  • Trim the chuck roast of excess fat and cut it into manageable pieces. Chop the onion and mince the garlic.

Cooking

  • In a large pot over medium heat, warm the olive oil. Season the roast with salt, pepper, chili powder, and cumin. Sear the roast for about 5-7 minutes until browned on all sides.
  • Add the chopped onion and minced garlic to the pot and sauté for around 3-4 minutes until the onions are translucent.
  • Pour in enough water or broth to cover the roast halfway and bring to a gentle simmer.
  • Reduce the heat, cover the pot, and let it cook for 4-6 hours until fork-tender.
  • Shred the roast in the pot, mixing in some cooking liquid to keep it moist.

Assembly

  • Warm the tortillas in a skillet for about 30 seconds on each side until pliable.
  • Fill each tortilla with shredded chuck roast and desired toppings.
  • Serve immediately with your favorite beverages.
