  • 1 cup chimichurri sauce Homemade or store-bought.
  • 1 cup diced tomatoes Fresh tomatoes add brightness.
  • 1/2 cup diced red onion
  • 1 each avocado, sliced Can substitute with bell pepper or cucumber if avoiding avocados.
  • 1 each lime, cut into wedges Use for serving.

Preparation

  • Gather all your ingredients in one place. If you haven’t cooked your chicken yet, do so and shred it into bite-sized pieces. Wash and chop your tomatoes, red onion, and avocado.

Cooking

  • In a skillet over medium heat, warm the shredded chicken for about 3-5 minutes.
  • Warm the corn tortillas in the skillet, cooking each side for about 1-2 minutes until pliable.

Assembly

  • Place a generous scoop of warm shredded chicken in each tortilla.
  • Drizzle chimichurri sauce over the chicken.
  • Sprinkle diced tomatoes and red onion on top.
  • Garnish with slices of avocado.
  • Serve with lime wedges on the side.

Notes

Store components separately to maintain freshness. Can be enjoyed fresh or reheated. Use a skillet to retain moisture when reheating the chicken.
