  • 2 cups Greek yogurt Use plain Greek yogurt for best results.
  • 1/4 cup honey or maple syrup Substitutes can include agave syrup or stevia.
  • 1 cup fresh blueberries Fresh blueberries are preferred over frozen.
  • 1 piece lemon zest Zest from one lemon.
  • 1 tablespoon lemon juice Juice of one lemon.

Instructions
 

Preparation

  • Gather all the ingredients and ensure the Greek yogurt is at room temperature for easier mixing.
  • Zest the lemon and juice it, setting both aside.

Mixing

  • In a large bowl, combine Greek yogurt, honey or maple syrup, lemon zest, and lemon juice. Mix until smooth.

Spreading

  • Line a baking sheet with parchment paper and pour the yogurt mixture onto it, spreading it evenly to about 1/2 inch thick.

Adding Blueberries

  • Scatter fresh blueberries across the top and lightly press each one into the yogurt mixture.

Freezing

  • Place the baking sheet in the freezer for 3-4 hours or until solid.

Serving

  • Once frozen, break the bark into bite-sized pieces and serve immediately.

Storing

  • Store leftovers in an airtight container in the freezer to preserve freshness.

Notes

For best results, do not skip the zest and ensure to press blueberries into the mixture before freezing. Feel free to customize this recipe by adding other fruits or toppings.
