Ingrédients

Base Mixture

  • 1.5 cups cottage cheese
  • 1 tbsp raw honey
  • 1 tsp pure vanilla extract

Add-ins

  • 1/3 cup blueberry jam
  • 4-6 oz fresh blueberries washed and dried
  • 1/4 cup granola

Instructions

  • Gather all ingredients and wash the blueberries thoroughly. Pat them dry with a clean towel.
  • In a mixing bowl, combine the cottage cheese, honey, and vanilla extract. Whisk until smooth and creamy.
  • Gently swirl in the blueberry jam without overmixing to create a marbled effect.
  • Fold in the fresh blueberries, distributing them evenly but carefully to keep them whole.
  • Add granola and fold it in gently to ensure crunchiness throughout the bark.
  • Line a baking sheet with parchment paper and spread the mixture evenly, about ½ inch thick.
  • Place the baking sheet in the freezer for at least 4 hours, or until completely solid.
  • Once frozen, remove from the freezer and break the bark into bite-sized pieces.
  • Serve immediately or store in an airtight container in the freezer for up to 3 months.

Notes

For a vegan alternative, use plant-based yogurt instead of cottage cheese and maple syrup instead of honey. Add nuts, seeds, or dark chocolate chips for extra flavor and texture. Always store in the freezer to maintain crispness and creaminess.
