Preparation

  • Start by rinsing the dried black-eyed peas under cold water. Soak them in fresh water overnight to ensure they cook evenly and become tender.

Cooking

  • In a large pot, heat some oil over medium heat. Add the chopped onion and sauté until it becomes soft and translucent.
  • Stir in the minced garlic and allow it to cook for an additional minute, letting the fragrant aroma fill your kitchen.
  • Drain the soaked black-eyed peas and add them to the pot. Pour in the vegetable broth and sprinkle in the thyme.
  • Bring the mixture to a boil, watching for the bubbles to break the surface.
  • Once your pot reaches a boil, reduce the heat to let it simmer and cook for about 30 minutes, stirring occasionally.
  • After the peas are tender, add the rice, ensuring it is evenly distributed. If the mixture looks too dry, add more water or broth.
  • Cover the pot and let it simmer for about 20 minutes until the rice is thoroughly cooked and has absorbed the flavorful liquid.
  • Once cooked, season with salt and pepper to taste, and adjust as needed.
  • Serve hot, garnished with chopped green onions.

Notes

For extra flavors, consider adding smoked paprika or hot sauce. This dish also freezes well for later meals.
