Preparation

  • Gather all the ingredients together. Ensure the black-eyed peas are pre-cooked, and dice the onion, bell pepper, and garlic.

Cooking

  • In a large skillet, heat olive oil over medium heat. Toss in the diced onion and bell pepper. Sauté for 3-5 minutes until the vegetables soften.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the ground beef to your skillet. Cook until browned, about 5-7 minutes. Drain away any excess fat.
  • Stir in the cooked black-eyed peas, diced tomatoes, cumin, and paprika. Add salt and pepper to taste.
  • Pour in the beef broth and let it come to a simmer.
  • Reduce the heat and let it simmer for about 20 minutes. Stir occasionally to prevent sticking.
  • Taste the mixture and adjust the seasoning if necessary.
  • Serve warm, optionally garnished with fresh herbs or cheese.
