  • 1 can black-eyed peas, drained and rinsed
  • 1/2 cup breadcrumbs Use gluten-free for a gluten-free version.
  • 1/4 cup diced onion
  • 1/4 cup chopped fresh parsley Can substitute with cilantro or other herbs.
  • 1 clove garlic, minced Can substitute with garlic powder or omit.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil (for frying)

Instructions
 

Preparation

  • Gather all your ingredients and measure them out.
  • Coarsely chop the onion, parsley, and garlic.
  • Drain and rinse the black-eyed peas thoroughly.

Mixing the Base

  • In a mixing bowl, mash the drained black-eyed peas until mostly smooth, leaving some chunks for texture.
  • Mix in breadcrumbs, diced onion, parsley, minced garlic, cumin, paprika, salt, and pepper until combined.

Forming the Patties

  • Take a small amount of the mixture, shape it into a ball, and flatten into a patty about 1/2 inch thick.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Once the oil is hot, carefully place the patties in the skillet.
  • Fry for about 3-4 minutes on each side until golden brown.

Finishing Touches

  • Transfer cooked patties to a plate lined with paper towels to absorb excess oil.
  • Let cool for a couple of minutes before serving.
  • Serve with your favorite dipping sauce.

Notes

For variations, consider adding jalapeños for spice or feta cheese for a Mediterranean twist. Ensure to use vegan breadcrumbs for a vegan version.
