Preparation

  • Gather all ingredients to streamline the process.
  • Drain and rinse the black-eyed peas in cold water.
  • Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion and parsley.

Cooking the Pasta

  • Bring a pot of salted water to a boil.
  • Cook the pasta according to package instructions until al dente, about 8-10 minutes.
  • Drain the pasta and rinse under cold water to stop the cooking process.

Combining Ingredients

  • In a large mixing bowl, combine the cooked pasta with the black-eyed peas, cherry tomatoes, cucumber, and red onion.
  • Gently toss to mix the ingredients well.

Adding Herbs and Dressing
