  • 1 cup cheddar cheese, shredded
  • 1 cup pickles, diced
  • 4 cups tater tots
  • 1 cup shredded lettuce
  • 1/2 cup Thousand Island dressing

Preparation

  • Start by prepping your ingredients. Chop the pickles finely, and if you choose to add any optional toppings like tomatoes or onions, slice them accordingly.

Cooking

  • In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat and season with salt and pepper.
  • Layer the cooked beef evenly in the bottom of a baking dish. Sprinkle the diced pickles over the beef, followed by half of the shredded cheddar cheese.
  • Layer the tater tots on top of the beef and pickle mixture, spreading them out evenly.
  • Sprinkle the remaining cheddar cheese on top of the tater tots.
  • Add optional toppings like sliced tomatoes or onions if using.
  • Preheat your oven to 400°F (200°C) and bake the casserole for 25-30 minutes until tater tots are golden brown and cheese is bubbling.

Serving

  • Let the casserole cool for 5-10 minutes, then top generously with fresh shredded lettuce and drizzle with Thousand Island dressing before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. To freeze, wrap tightly in plastic wrap and foil; it can stay good for up to 3 months.
