Ingrédients
  

Chicken and Marinade

  • 4 chicken breasts boneless and skinless
  • 1/2 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • salt and pepper to taste

Optional Garnish

  • fresh parsley or basil chopped

Instructions
 

  • Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  • In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
  • Place chicken breasts in the baking dish and pour the marinade over them, turning to coat evenly. Marinate for at least 30 minutes.
  • Bake the chicken uncovered for 25–30 minutes or until cooked through (internal temperature 165°F / 75°C).
  • Let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
  • Drizzle remaining balsamic glaze from the pan over the chicken and garnish with fresh herbs if desired.

Notes

For deeper flavor, marinate the chicken for up to 2 hours. Add honey or Dijon mustard to the marinade for a touch of sweetness. This dish pairs beautifully with roasted vegetables, rice pilaf, or a crisp salad. Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
