  • 1 cup Erythritol Other keto sweeteners like stevia or monk fruit can be used.
  • 1 large Egg Binds the mixture together.
  • 1 tsp Vanilla Extract Using pure extract is recommended for the best taste.
  • 1 tsp Baking Powder Make sure it’s evenly mixed to avoid lumps.
  • 1/2 tsp Salt Elevates the overall flavor.
  • 2 tsp Ground Cinnamon Consider adding nutmeg for extra depth.
  • 1 serving Additional Sweetener (optional) A light dusting with powdered erythritol enhances visual appeal and taste.

Preparation

  • Start by gathering all ingredients and measuring them out accordingly. Softening the cream cheese beforehand makes it much easier to mix.

Mixing

  • In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, salt, and ground cinnamon. Make sure they’re mixed well to avoid lumps.
  • In another bowl, mix the softened cream cheese until smooth.
  • Add the egg and vanilla extract to the cream cheese mixture. Blend until fully combined, then gradually add the dry ingredient mixture. Combine everything until a dough forms.

Assembly

  • On a parchment-lined surface, roll out the dough into a rectangle, about 1/4 inch thick.
  • Spread a thin even layer of cinnamon filling over the dough, making sure to cover the surface evenly.
  • Starting from one edge, roll the dough tightly into a log.
  • Using a sharp knife, slice the rolled dough into pieces about 1–2 inches thick.

Baking

  • Place the slices on a baking sheet lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until golden brown.
  • Once baked, allow the roll-ups to cool slightly. If desired, dust with powdered erythritol before serving.

Notes

These roll-ups can be customized with various fillings and toppings. For a dairy-free option, substitute cream cheese with whipped coconut cream. Store in the fridge for up to a week or freeze for longer storage.
