Cooking the Potatoes

  • Drain the potatoes in a colander and let cool completely.

Combining Ingredients

  • Dice the cooled potatoes into bite-sized pieces.
  • In a large mixing bowl, combine the diced potatoes, celery, and red onion.
  • In a separate bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
