  • 3 cups fresh green beans (ends removed and cut in half)

For the Liquid Ingredients

  • 3 cups low-sodium chicken broth Can be substituted with vegetable broth for a vegetarian option.
  • 1 can low-sodium cream of mushroom soup Check for gluten-free if necessary.
  • 1/4 cup grated Parmesan cheese Can be omitted or replaced with nutritional yeast for a dairy-free version.

For Seasoning

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Topping

  • Crispy onion strings Generously sprinkle over the top before baking.

Instructions
 

Preparation

  • Gather and prepare your ingredients. Mince the garlic, finely dice the onion, and slice the mushrooms. Remove the ends of the green beans and cut them in half.

Cooking the Base

  • Melt the butter in a large skillet over medium heat.
  • Add the diced onion and sliced mushrooms, sautéing until just tender, about 4-5 minutes.
  • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat.

Blanching the Green Beans

  • In a medium saucepan, bring the chicken broth to a boil.
  • Add the green beans and cook for about 8 minutes, or until crisp-tender. Drain the beans thoroughly.

Combining Ingredients

  • In a large bowl, combine the sautéed mushroom mixture with the blanched green beans.
  • Add the cream of mushroom soup, Parmesan cheese, salt, and pepper. Stir until well mixed.

Baking

  • Preheat your oven to 350 degrees Fahrenheit.
  • Spray a 2-quart baking dish with cooking spray.
  • Transfer the combined mixture into the prepared baking dish and spread it evenly.
  • Generously sprinkle the crispy onion strings over the top.
  • Bake for 20 minutes until heated through and the onion topping is golden brown.

Serving

  • Remove from the oven and let it sit for a few minutes before serving. Best enjoyed hot.

Notes

You can prepare the casserole a day in advance and simply bake it before serving. Leftovers can be stored in an airtight container for up to 3-4 days.
