  • 1 tbsp vanilla extract
  • 1 large egg (at room temperature) For a vegan option, substitute with a flax egg.
  • 1 1/4 cup old-fashioned whole rolled oats
  • 1 cup all-purpose flour To make it gluten-free, substitute with almond flour or a gluten-free flour blend.
  • 1/4 tsp cinnamon Can experiment with other spices.

  • 1/2 tsp baking soda
  • 1/4 tsp salt

Glaze Ingredients

  • 3/4 cup powdered sugar
  • 1.5 tbsp milk Use non-dairy milk for a dairy-free glaze.
  • 1/4 tsp vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Gather all of your ingredients and tools.
  • Line your baking sheet with parchment paper.

Mixing

  • Cream the softened butter, brown sugar, and granulated sugar together until light and fluffy—about 2-3 minutes.
  • Add the egg and vanilla extract. Beat until creamy and smooth.
  • In a separate bowl, whisk together flour, oats, cinnamon, nutmeg, baking soda, and salt.
  • Slowly add dry ingredients to wet mixture, stirring gently until just combined.

Baking

  • Scoop the cookie dough into 8 equally sized balls and place them on the prepared baking sheet.
  • Flatten each cookie to about 1 inch thick.
  • Bake for 10 minutes, or until slightly golden.
  • Cool on the baking sheet for 20 minutes.

Glazing

  • While cooling, whisk together the powdered sugar, milk, and vanilla extract until smooth, then drizzle over the cooled cookies.

Notes

Store cookies in an airtight container. They last up to 1 week at room temperature or 2 weeks in the fridge. They freeze well for up to 3 months. Thaw at room temperature before enjoying.
