Ingrédients
  

For the Boats

  • 2 small sweet potatoes
  • 1/2 lb ground beef (or turkey)
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika (or chili powder)
  • 2/3 cup cottage cheese
  • 1/2 medium avocado, sliced
  • 2-3 tsp hot honey (or honey + chili flakes)
  • Black pepper to taste

Instructions
 

Preparation

  • Wash the sweet potatoes thoroughly and prick them with a fork several times.
  • Preheat your oven to 400°F.

Baking

  • Place the sweet potatoes directly on the middle rack and bake for 40-50 minutes until soft.
  • Alternatively, microwave them for about 10-12 minutes until soft.

Cooking the Beef

  • In a skillet over medium heat, add the ground beef with salt and smoked paprika.
  • Cook the beef for 5-7 minutes until browned, breaking it up with a spatula.

Assembling the Boats

  • Once the sweet potatoes are cooked, cut them lengthwise and fluff the insides.
  • Spoon the browned beef mixture over the fluffed sweet potato halves.
  • Add a scoop of cottage cheese on top of the beef.
  • Top with sliced avocado.
  • Drizzle with hot honey.
