Instructions

Preparation

  • Gather all the necessary ingredients and measure them out.

Making the Marinade

  • In a mixing bowl, whisk together the honey, lime juice, minced garlic, salt, and black pepper until combined.

Marinating the Chicken

  • Place the chicken breasts in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Cooking the Chicken

  • Preheat your grill to medium-high heat or your oven to 400°F.
  • Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes per side or bake for 20-25 minutes, flipping halfway through, until the internal temperature reaches 165°F.

Preparing the Mango Salsa

  • In a separate bowl, combine the diced mango, red onion, minced jalapeño, chopped cilantro, and lime juice. Toss gently to mix.

Final Touches

  • Let the chicken rest for at least 5 minutes after cooking, then slice and top with a generous scoop of mango salsa. Serve with rice, salad, or in tortillas.

Notes

For a lower glycemic index option, substitute honey with agave nectar. Ensure you use ripe mango for the best flavor. Tips: Allow chicken to marinate, check for proper cooking temperature, and adjust jalapeño based on spice preference.
