Ingrédients
  

Honey Lime Chicken

  • 2 boneless skinless chicken breasts cubed
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Rice and Toppings

  • 2 cups cooked white rice warm
  • 2 avocados diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely diced
  • 2 tbsp fresh cilantro chopped

Instructions
 

  • In a bowl, whisk together honey, lime juice, olive oil, garlic, salt, and black pepper. Add cubed chicken and marinate for at least 30 minutes.
  • Heat a skillet over medium heat and cook the marinated chicken for 6–8 minutes, stirring occasionally, until fully cooked and slightly caramelized.
  • To assemble, place a ring mold on a serving plate. Add a layer of warm rice and press gently.
  • Top with cooked honey lime chicken, diced avocado, cherry tomatoes, and red onion.
  • Carefully remove the mold and garnish with fresh cilantro before serving.

Notes

You can substitute brown rice or quinoa for extra fiber. Add a drizzle of lime crema or a squeeze of fresh lime for added brightness.
