  • 2 cups cooked rice
  • 1 lb chicken fillets, diced
  • 1/2 cup honey
  • 1/2 cup BBQ sauce Ensure it is gluten-free if needed.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Preparation

  • Gather all your ingredients. Dice the chicken fillets into bite-sized pieces and set aside. Cook your rice according to package instructions, then fluff it with a fork once it’s done.

Cooking

  • Heat the olive oil in a large pan over medium heat. Add the diced chicken and season with salt, pepper, and garlic powder. Cook for about 6–8 minutes until it is no longer pink and reaches an internal temperature of 165°F.
  • In a bowl, combine the honey and BBQ sauce, mixing well until fully blended.
  • Once the chicken is cooked, pour the honey BBQ sauce over it, stirring well to ensure all the pieces are coated. Allow it to simmer for about 5 minutes.
  • Spoon the honey BBQ chicken over a bed of cooked rice and garnish with fresh herbs if desired.

Notes

For enhanced flavor, marinate the chicken in the honey and BBQ sauce mixture for at least 30 minutes before cooking. Store leftovers in an airtight container for 3-4 days.
