  • 1 pound Fresh Green Beans, trimmed and rinsed. Snap off the ends before rinsing.
  • 2 cups Canned Cream of Mushroom Soup Homemade version can be used if preferred.
  • ½ cup Milk Whole milk for creaminess.
  • 2 tablespoons Unsalted Butter For flavor.
  • 1 medium Yellow Onion, diced For sautéing.
  • 2 cloves Garlic, minced Enhances taste.
  • to taste Salt Keep in mind that the soup is salted.
  • to taste Black Pepper, freshly cracked For seasoning.
  • 1 tablespoon Soy Sauce Adds depth of flavor.
  • 1 cup Crispy Fried Onions, divided For topping and mixing.
  • 1 cup Shredded Cheddar Cheese (optional) For a cheesy twist.

Instructions
 

Preparation

  • Start by preparing your fresh green beans. Snap off the ends and rinse them under cold water.
  • Bring a pot of salted water to a rolling boil. Add the green beans and blanch for 5-7 minutes until they are tender-crisp.
  • After blanching, drain the green beans and immediately plunge them into a bowl of ice water to cool.

Cooking

  • In a large saucepan or Dutch oven, melt the unsalted butter over medium heat. Add the diced yellow onion and sauté until translucent and slightly golden, about 5-7 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the cream of mushroom soup and milk, followed by soy sauce. Whisk until the mixture is smooth and starts to thicken.
  • Season the mixture with salt and black pepper. If desired, fold in shredded cheddar cheese until melted.
  • Drain the blanched green beans and add them to the creamy sauce. Gently stir to coat every bean.
  • Transfer the mixture to a 9x13 inch baking dish. Sprinkle half of the crispy fried onions on top.
  • Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, until bubbly. Add the remaining crispy fried onions and bake for another 5-10 minutes until golden.

Notes

You can prepare this dish in advance and store it in the fridge. For freezing, wrap the dish well before baking.
