Instructions

Preparation

  • Begin by measuring out all your ingredients accurately. Gather your granulated sugar, corn syrup, water, and any flavorings or colorings you wish to use.

Cooking the Base

  • In a medium saucepan, combine the granulated sugar, corn syrup, and water over medium heat. Stir regularly until the sugar has fully dissolved.
  • Once the sugar has dissolved, bring the mixture to a full boil without stirring.

Temperature Check

  • Monitor the temperature closely using a candy thermometer, aiming for the hard ball stage at approximately 240°F (115°C).

Finishing Touches

  • Remove from heat once the correct temperature is reached, allowing bubbling to subside before adding vanilla extract and food coloring. Stir gently to combine.
  • Pour the mixture onto a greased surface such as wax paper or a marble slab.

Shaping and Decorating

  • Once cool enough to touch, knead the mixture with greased hands to make it pliable for shaping.
  • Work in any edible decorations during kneading.

Setting and Serving

  • Let the shaped candy sit at room temperature until it hardens fully, which might take a few hours.
  • Once set, package the candy in decorative boxes or bags for gifting.

Notes

Store the candy in an airtight container at room temperature. Avoid refrigeration as it can alter texture. You can gently warm softened candy in the microwave.
