Preparation

  • Begin by prepping your ingredients. Slice the red onion, halve the cherry tomatoes, and mince the garlic. Pat the chicken breasts dry with paper towels and season them with salt and black pepper.

Whisk the Glaze

  • In a bowl, whisk together balsamic vinegar, honey, olive oil, and minced garlic. This glaze will not only flavor the chicken but also double as a sauce for the vegetables.

Cook the Chicken

  • Heat a large oven-safe skillet over medium-high heat. Add the olive oil and let it warm.
  • Once the oil is hot, add the seasoned chicken breasts to the skillet. Sear for 2 to 3 minutes on each side or until they are golden brown.

Add Vegetables and Glaze

  • Scatter the halved cherry tomatoes and sliced red onion around the chicken in the skillet.
  • Pour the balsamic glaze over the chicken and vegetables, ensuring everything is evenly coated.

Bake

  • Transfer the skillet to a preheated oven at 400°F. Bake for 15 to 20 minutes, or until the chicken is fully cooked and the veggies are tender.

Serve

  • Remove the skillet from the oven. Garnish with fresh basil if desired, and spoon some pan sauce over everything before serving.

Notes
