Preparation

  • Gather all your ingredients.
  • Juice the lemons and strain out any seeds.
  • Mince the garlic.
  • In a small bowl, whisk together the lemon juice, Dijon mustard, and minced garlic.
  • Slowly drizzle in the olive oil while whisking until emulsified.
  • Season with salt and pepper to taste, adjusting for preferred acidity and flavor.
  • Serve immediately or transfer to a sealed container for storage.
  • Shake well before using if stored.

Notes

For added flavor, consider including fresh herbs or a touch of honey. Best used fresh but maintains good quality for up to a week in the refrigerator. Shake well before each use as separation may occur.
