High Protein Creamy Cajun Chicken & Rice

Ingrédients
  

Chicken and Marinade

  • 800 g Chicken Breast (cut into halves) Can substitute with chickpeas or tofu for a vegetarian option.
  • 1.5 Tsp Cajun Seasoning Mix Plus an additional 1/2 tsp for flavoring the rice.
  • 2 Tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking Use dairy-free alternative for dairy-free version.

For the Sauce

  • 250 ml Milk Use coconut milk for dairy-free version.
  • 150 g Light Cream Cheese Dairy-free alternative can be used.
  • 40 g Parmesan Can substitute with nutritional yeast for a vegan option.

Vegetables and Seasonings

  • 1 Medium Red Onion (chopped)
  • 4-5 cloves Garlic (chopped)
  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chilli Powder

Garnish

  • 1 bunch Fresh Parsley For garnish.
  • 15 g Grass Fed Butter For finishing the sauce.

Instructions
 

Preparation

  • Gather all ingredients, chop red onion and garlic, and cut the chicken breast into halves.

Marinating the Chicken

  • Combine chicken breast with olive oil and 1.5 tsp of Cajun seasoning mix. Marinate overnight in the fridge.

Cooking the Chicken

  • Heat a pan over medium-high heat and melt 25g of grass-fed butter. Add marinated chicken and cook until golden brown, about 7-10 minutes on each side.

Resting the Chicken

  • Remove chicken from the pan and let it rest for a few minutes.

Sautéing Onions and Garlic

  • In the same pan, add chopped red onions and garlic. Sauté until fragrant, about 2-3 minutes.

Flavoring the Rice

  • Stir in the remaining Cajun seasoning mix and day-old rice, allowing it to absorb flavor.

Creating the Sauce

  • Lower heat, melt remaining butter in the pan, then whisk in milk. Add light cream cheese and Parmesan, stirring until smooth.

Combining and Serving

  • Layer Cajun rice on plates, add sliced chicken on top, and drizzle with creamy sauce.

Garnishing

  • Sprinkle fresh parsley over the plated dish for a vibrant touch.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat slowly to retain moisture.
