Preparation

  • Gather all your ingredients. Dice the chicken fillets into bite-sized pieces, rinse and chop the mixed vegetables, and mince the garlic.

Cooking

  • In a skillet or wok, heat the olive oil over medium-high heat. Add the diced chicken and cook for about 5-7 minutes until browned and cooked through, stirring often.
  • Add the minced garlic to the skillet and cook for about a minute until fragrant, being careful not to burn it.
  • Add the mixed vegetables and stir them in, cooking for another 3-5 minutes until tender but vibrant.
  • Pour soy sauce over the chicken and veggies, mixing well to coat everything evenly.
  • Season with salt and pepper to taste, adjusting for balance.
  • Continue to cook for an additional 2-3 minutes until the sauce thickens and clings to the chicken.
  • Remove from heat and serve hot over rice or noodles.

Notes

Allow leftovers to cool completely before storing in an airtight container. Can be kept in the refrigerator for 3-4 days; reheat in the microwave or skillet. Freeze up to three months.
