  • 1 teaspoon dried thyme

Preparation

  • Gather all your ingredients and prep them: dice the chicken breast, chop the onion, and mince the garlic.

Cooking

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until fragrant and onions are translucent, about 3-4 minutes.
  • Add the diced chicken, season with salt, pepper, thyme, and rosemary. Sauté until browned on all sides, about 5-7 minutes.
  • Stir in the rice, ensuring it's mixed well with the chicken and aromatic base.
  • Pour in the chicken broth and bring to a boil, stirring occasionally.
  • Once boiling, reduce heat to low, cover the pot, and let it simmer for 18-20 minutes.
  • After 20 minutes, uncover the pot, fluff the rice gently with a fork to separate the grains.
  • Garnish with fresh herbs if desired, serve warm and enjoy.

Notes

For added flavor, consider using homemade chicken broth and adding a splash of lemon juice before serving. Garnish with grated Parmesan for a gourmet touch. Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
