Ingrédients
  

  • 2 pounds beef chuck cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots sliced
  • 3 potatoes diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 bay leaf remove before serving
  • 2 tbsp olive oil

Instructions
 

  • Prepare all ingredients by chopping the vegetables and cutting the beef into 1-inch cubes.
  • Heat olive oil in a large pot over medium heat. Brown the beef on all sides to develop rich flavor.
  • Add chopped onion and minced garlic. Cook until the onion becomes translucent and fragrant.
  • Stir in tomato paste and thyme, cooking for about a minute to enhance the flavor.
  • Season with salt and black pepper, then add the carrots, potatoes, and bay leaf.
  • Pour in beef broth and bring the mixture to a boil.
  • Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours until the beef is tender and the flavors meld together.
  • Adjust seasoning if needed, remove the bay leaf, and serve hot with crusty bread or rice.

Notes

For deeper flavor, add a splash of red wine during simmering. Fresh herbs like rosemary or parsley make excellent finishing touches. This stew freezes well for up to three months.
