For the Base

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Main Ingredients

  • 2 cups diced vegetables (carrots, potatoes, bell peppers) Can be customized based on preference.
  • 1 can chickpeas, drained and rinsed 15 oz can
  • 1 can diced tomatoes 15 oz can
  • 1 can vegetable broth 15 oz can

Seasonings

  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Optional Garnishes

  • Fresh herbs for garnish e.g., parsley or cilantro

Instructions
 

Preparation

  • Thoroughly wash and chop all your chosen vegetables.
  • In a skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until fragrant and translucent, about 3-5 minutes.

Cooking

  • In the crockpot, combine the sautéed onions and garlic with the diced vegetables, chickpeas, diced tomatoes, and vegetable broth. Stir well.
  • Sprinkle the dried basil, oregano, salt, and pepper over the mixture. Adjust seasonings to taste.
  • Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
  • If possible, stir the mixture occasionally to distribute flavors.
  • Check the vegetables for tenderness before serving.
  • Ladle the dish into bowls and garnish with fresh herbs if desired.

Notes

To store leftovers, let dish cool and place in an airtight container. It can be kept in the fridge for up to 5 days or frozen for up to three months. Reheat in a saucepan over medium heat or microwave until heated through.
