  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika

For the tacos

  • 8 taco shells or tortillas (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • to taste fresh parsley, for garnish

Instructions
 

Preparation

  • Gather all the ingredients for your Healthy Mediterranean Chicken Tacos.
  • In a bowl, mix together olive oil, minced garlic, ground cumin, paprika, salt, and pepper.
  • Coat the chicken breasts thoroughly with the marinade and let sit in the fridge for about 30 minutes.
  • Preheat your grill or skillet over medium heat.

Cooking

  • Once heated, place the marinated chicken on the grill or skillet and cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove the chicken from heat and let it rest for a few minutes.
  • Slice the chicken into thin strips.

Assembly

  • Take your taco shells or tortillas and fill them with the sliced chicken.
  • Top with halved cherry tomatoes, diced cucumber, diced red onion, crumbled feta cheese, and a sprinkle of fresh parsley.
  • Plate the tacos and enjoy while they’re warm!

Notes

Serve with sides like Mediterranean quinoa salad or yogurt dip. For a spicy twist, add red pepper flakes to the marinade.
