Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease lightly.
In a bowl, whisk together pumpkin puree, Greek yogurt, honey, eggs, and vanilla extract until smooth.
In a separate bowl, combine whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
Divide the batter evenly into the muffin cups, filling about two-thirds full.
Bake for 18–20 minutes or until a toothpick inserted comes out clean.
Cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
Customize these muffins by adding nuts, seeds, or chocolate chips. For dietary needs, substitute gluten-free flour, dairy-free yogurt, or flax eggs.
