Ingrédients
  

  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease lightly.
  • In a bowl, whisk together pumpkin puree, Greek yogurt, honey, eggs, and vanilla extract until smooth.
  • In a separate bowl, combine whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Divide the batter evenly into the muffin cups, filling about two-thirds full.
  • Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  • Cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Customize these muffins by adding nuts, seeds, or chocolate chips. For dietary needs, substitute gluten-free flour, dairy-free yogurt, or flax eggs.
