  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground provides the best flavor.
  • 1/4 teaspoon garlic powder

Preparation

  • Preheat your oven to 375°F (190°C). Gather all ingredients and chop your vegetables.
  • In a large mixing bowl, whisk together the eggs and cottage cheese until smooth.
  • Sprinkle in the salt, black pepper, and garlic powder. Mix well.
  • Gently fold in the diced bell peppers, chopped green onions, and spinach.
  • Lightly grease a muffin tin with cooking spray or oil.
  • Carefully pour the egg and vegetable mixture into each muffin cup, filling them about three-quarters full.
  • Place the muffin tin in the preheated oven and bake for 20-25 minutes.
  • Take the muffin tin out of the oven and let it cool for a few minutes before gently removing the bites.
  • Serve warm or at room temperature.
  • Store leftovers in an airtight container in the refrigerator for up to five days.
