  • 1 lb chicken breast, cut into pieces
  • 2 cups cauliflower florets steamed until tender
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese can substitute with vegan cheese or nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 8 oz fettuccine pasta can substitute with gluten-free pasta or zoodles

Preparation

  • Begin by gathering all necessary ingredients.
  • Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente.
  • Steam the cauliflower florets until tender, about 7-10 minutes.
  • In a skillet over medium heat, add olive oil. Once the oil is hot, add the minced garlic and sauté for 1-2 minutes until fragrant.

Cooking

  • Add the cut pieces of chicken breast to the skillet and cook for approximately 6-7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In a blender, combine the steamed cauliflower, chicken broth, and Parmesan cheese. Blend until smooth and creamy.
  • Slice the cooked chicken and return it to the skillet. Pour the blended cauliflower sauce over the chicken and stir to combine, allowing everything to heat through for 2-3 minutes.
  • Add the drained fettuccine to the skillet, tossing everything together until well coated with the sauce.

Finishing Touches

  • Season with additional salt and pepper to taste and serve.

Notes

This dish is perfect for meal prep or family dinners. Store leftovers in an airtight container for 3-4 days.
