Ingrédients
  

  • 1/3 cup melted coconut oil or olive oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2–3 medium)
  • 1/4 cup milk (dairy or non-dairy)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 3/4 cups white whole wheat flour or regular whole wheat flour
  • Optional add-ins: chopped nuts, chocolate chips, or dried fruit

Instructions
 

  • Preheat oven to 325°F (165°C). Grease a 9×5-inch loaf pan.
  • In a large bowl, whisk together the oil and honey. Add the eggs and beat well.
  • Mix in the mashed bananas and milk, followed by baking soda, vanilla, salt, and cinnamon.
  • Stir in the flour until just combined. Fold in nuts, chocolate, or dried fruit if desired.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

This healthier banana bread uses whole wheat flour and natural sweeteners. It stays moist for up to 3 days at room temperature, a week refrigerated, or 3 months frozen.
