  • Slice the pineapple into rings or wedges as preference dictates.

Cooking Rice

  • In a medium-sized pot, combine jasmine rice, coconut milk, and water. Bring this mixture to a boil over medium heat.
  • Once boiling, reduce the heat to low, cover, and let it simmer for approximately 15-20 minutes until the rice is cooked and has absorbed the liquid.

Cooking Chicken

  • While the rice is cooking, heat olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt and pepper, then add to the skillet.
  • Cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).

Grilling Pineapple
