Preparation

  • Gather all your ingredients and tools. Make sure your butter is at room temperature and preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter with the powdered sugar using an electric mixer on medium speed for about 3 minutes until light and fluffy.
  • Add the egg yolk and vanilla extract, then beat until fully incorporated and smooth.
  • Turn the mixer down to low speed and gradually add the all-purpose flour and salt, mixing just until barely incorporated.
  • By hand, gently fold in the mini chocolate chips and all but 1 tablespoon of Halloween sprinkles.
  • If making slice-and-bake cookies, form the dough into a log about 10 inches long, wrap it in plastic wrap, and chill for about 2 hours until firm.
  • For cut-out cookies, divide the dough into two halves, roll each half out to about ¼ inch thickness on lightly floured parchment paper, sprinkling extra Halloween sprinkles over if desired.
  • Cut shapes from the rolled-out dough using cookie cutters, lift carefully onto the baking tray, cover with plastic wrap, and chill for another 20 minutes.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until edges start to turn golden brown. Cool on the baking sheets for about 10 minutes before transferring to wire racks.
  • If desired, melt some extra chocolate chips for decorating. Place melted chocolate in a zip-lock bag, snip a corner, and decorate your cookies.
